1/2 lb. (4 c cooked) Curly Egg Noodles
1 T Olive Oil
1 T Butter
1 lb. Lean Ground Beef*
2 8-oz cans Tomato Sauce
1 c (8 ounces) Cottage Cheese
1 8-oz package of Cream Cheese – softened
¼ c Sour Cream
1/3 c snipped Green Onions or Chives
1/2 Green or Red Pepper, minced
2 T melted Butter
Cook noodles and drain. Toss with olive oil. Brown meat in 1 T butter. Stir in tomato sauce. Remove from heat.
In a large bowl, combine cottage cheese, cream cheese, sour cream, onions and pepper.
Preheat oven to 375. In a 2-quart casserole dish, spread half the noodles, cover with cheese mixture, then cover with rest of noodles. Top with meat. Pour melted butter over all.
Bake uncovered for 30 minutes.
(*Use lean ground beef, bison, turkey or lamb.)
Wonderful dish to take to someone who is ill or to welcome a new baby, etc. When you take it to someone else, get it to the point of final baking and then include the instructions.
