FROG-EYE SALAD
1 c. sugar
2 T. flour
1/2 t. salt
1 can crushed pineapple
1 can pineapple chunks (cut up pineapple chunks)
3 eggs
1 box Acini DePepe Macaroni
2 cans mandarin oranges
9 oz. Cool Whip
1 small pkg. miniature marshmallows
Step One
1 c. sugar
2 T. flour
1/2 t. salt
1-3/4 c. pineapple juice (use juice drained from canned pineapple)
3 egg yolks/beaten
Combine above ingredients and cook over medium heat – stir constantly until thickened. Cool completely.
Boil Acini DePepe Macaroni in salted water – follow directions on box. Blanch and cool. Put in large bowl and add cooked mixture. Cover and let set in refrigerator overnight.
Step Two
Next morning, add the following ingredients:
1 can crushed pineapple
1 can pineapple chucks (cut up)
(Use juice in Step One. Best results if you let drain for about 30 minutes)
2 cans mandarin oranges – drained
1 9 oz. container of Cool Whip
1 small package of miniature marshmallows
Chill several hours or overnight again.
Children especially like this!
