Mom’s Deviled Eggs

6 shelled hard-cooked eggs
4 T. mayonnaise
1/4 t. salt
Speck Pepper
1/4 t. dry mustard
1 t. minced onion
(or 1/4 t. onion salt)

Cut shelled eggs in halves, lengthwise or crosswise. Carefully remove yolks and lay whites aside in pairs. Mash yolks, then add remaining ingredients. Refill whites with this mixture.

Makes 12 stuff egg halves.

Kris’ Sweet Potato Fries

Peel and microwave sweet potatoes for about four minutes – or until they are soft enough to cut
Slice in half and then into planks (like steak fries)
Line a cookie sheet with foil and spray with Butter Pam
Arrange potatoes on cookie sheet and spray with Butter Pam
Sprinkle with a cinnamon and sugar mixture ( I use very little)
or Salt and Pepper

Bake at about 400 degrees for about 30 to 40 minutes or until browned
You can broil for the last couple of minutes if desired
You can also bake them a little longer at a lower temp – if that works better with what else you are cooking
