Butter for ramekins

¾ c Semi-Sweet Chocolate Chips

1 stick (4 oz) Unsalted Butter

2 large Eggs

¾ c Superfine Sugar

3 T All-purpose Flour

(1/2 c white Chocolate Chips – I don’t use)

Place baking sheet I an oven preheated to 400 degrees.  Butter four 2/3 c Ramekins and set aside. 

Using microwave, melt together semi-sweet chocolate chips and butter.  Set aside to cool.

 In a separate bowl, combine eggs, sugar and four.  Add cooled chocolate mixture and mix until blended.  (Add white chocolate chips if you wish.)

 Divide mixture evenly among the ramekins and place on baking sheet.  Bake until tops are shiny and cracked and chocolate beneath is hot and gooey, about 20 minutes.

Serve with Vanilla Ice Cream.

Cheese Quesadillas

8 flour Tortillas

2 c grated Cheddar Cheese

2 c grated Jack Cheese

Oil Olive

 Brush 4 tortillas lightly on one side with the oil.  Place 4 tortillas on the grill, oiled side down.  Top with cheese to taste and another tortilla on each.  Turn quesadillas when bottoms are browned and cheese begins to melt.  Brown on the other side.  Serve hot.  Cook time – about 7-1/2 minutes each side.  Servings:  4.
